The Carter-Hoffmann HL2-8 is a half-height heated holding and proofing cabinet designed for optimal food preservation and preparation. This non-insulated unit features a single compartment with a capacity for either 16 standard 12" x 20" pans or 8 larger 18" x 26" pans, making it versatile for various kitchen needs.
Equipped with 3" fixed wire universal slides, it allows for easy loading and unloading of pans. The cabinet includes a single pane tempered glass door for visibility and accessibility. Bottom-mount forced air heat ensures even temperature distribution, while the integrated water reservoir maintains humidity levels for proofing dough.
Mechanical controls and a digital thermometer provide precise temperature management. Constructed from durable aluminum, the HL2-8 is built for longevity and ease of cleaning. It is mobile with four 5" swivel casters, two of which have brakes for stability. The cabinet is ETL and ETL-Sanitation certified, ensuring compliance with safety and sanitation standards.
