The Falcon HC-12HPNI is a mobile half-height proofer cabinet designed for versatility and efficiency in food preparation. Measuring 24"W x 34.65"D x 33.46"H, this heavy-duty aluminum cabinet features a non-insulated heater that can operate in combination mode or heat-only mode. It accommodates up to 18 standard 18" x 26" pans, making it ideal for various baking and proofing needs.
The proofer offers humidity control ranging from 30% to 95% in proof mode, while the heat mode can reach nominal temperatures of up to 185°F (85°C). An integrated air baffle and circulating air blower ensure even heat distribution throughout the cabinet, promoting consistent results.
Mobility is enhanced with (2) swivel plate casters and (2) swivel/brake plate casters equipped with polyurethane tread, allowing for easy maneuverability and stability. The unit operates at 1500 watts on a 120V/60/1-ph power supply and is certified by cETLus, UL, and NSF, ensuring compliance with industry standards.
