This unit boasts an impressive blast chill/freeze capacity of 220 lbs, rapidly cooling from 194°F to 37°F in approximately 90 minutes, or from 194°F to 0°F in about 4 hours.
Equipped with touch pad controls, the MULTIFRESH MF 100.2 PLUS features four standard chilling and freezing cycles, along with an additional 122 dynamic, chef-designed cycles that can be customized and recorded for repeat use. The favorites menu allows for quick access to preferred settings, while WIFI and USB connectivity enable seamless data transfer to HACCP software.
This versatile unit supports low-temperature cooking, automatic chilling, freezing, hot holding, thawing, proofing, regeneration, holding, dehydration, pasteurization, and chocolate melting cycles, with a temperature range from 185°F to -40°F.
