The Irinox MULTIFRESH NEXT S EXCELLENCE ECO-SILENT is a versatile blast chiller and shock freezer designed for professional kitchens. This reach-in unit features 13 dedicated functions, including Blast Chilling, Shock Freezing, Cold Holding, Frozen Holding, Thawing, Proofing, Regenerating, Chocolate Melting, Pasteurization, Dehydrating, Low-Temperature Cooking, and Automatic Chilling and Freezing.
It accommodates (5) 18" x 13" sheet pans and (4) 12" x 20" x 2.5" steam table pans (pans not included) with a yield capacity of 55 lbs for both cooling and freezing. The unit operates quietly, utilizing electronic 5-speed evaporator fans and variable speed electronic condenser fans to manage temperatures from -31ºF to +185ºF, suitable for climate class 4 (86ºF ambient).
The rapid blast chill capability allows for cooling from 194°F to 37°F in approximately 90 minutes, while the rapid shock freeze function can take food from 194°F to 0°F in about 4 hours. It includes USB HACCP data transfer, automatic cold and frozen holding, and touch pad controls for easy operation.
Additional features include a temperature probe, an automatic SANIGEN® sanitation system, a self-contained air-cooled condensing unit, one stainless steel wire shelf, and adjustable stainless steel legs. Constructed from durable 304 stainless steel, the unit is ETL Certified for electrical safety and sanitation standards, and uses R290 Propane Refrigerant for eco-friendly operation. The unit comes with a cord but no plug; a suggested plug is L6-15P NEMA.
