The Metro C539-CDS-U is a mobile heated holding and proofing cabinet designed for optimal food preservation and preparation. The removable bottom mount control module allows for straightforward operation, with a thermostat adjustable up to 200°F. The cabinet accommodates a variety of pan sizes, with universal wire slides on 3" centers that can be adjusted in 1 1/2" increments, holding up to (18) 18" x 26" or (34) 12" x 20" x 2 1/2" pans.
