The mega-top prep table combines a spacious refrigerated ingredient rail on the top with a full-width refrigerated storage cabinet underneath, creating a high-capacity prep station that keeps ingredients chilled and within arm’s reach while supporting active prep work. These units typically feature a wide cut-board work surface integrated into the top, multiple recessed pans for toppings or prep ingredients, and a large interior storage cabinet or drawers below for bulk chilled storage. Construction is commercial-grade—stainless steel exterior and interior or stainless front with aluminum liner—ensuring durability in heavy use kitchens. The refrigeration system often uses environmentally friendly R-290 refrigerant, delivers forced-air or ducted airflow to maintain consistent temperatures throughout the rail and cabinet, and supports food-safe operation of fresh ingredients.
